Sweet Potatoes contain notable amounts of Vit. A, Vit. C., Vit. E, potassium, manganese, iron, calcium, copper, B1, B6, fiber and like most vegetables, antioxidants. Sweet Potatoes are considered to be anti-inflammatory and good blood sugar regulators.
