Mama Needs a Time Out from the Kitchen
Ladies, I just discovered a new tool to keep my sanity. Today was one of those HOT (104) summer days and my kids were on the go. Busy and tired and melting were the words I use to describe days like today. And the last place I want to be is in the kitchen. So take a time out from your kitchen and let your crock pot do all the work.
Did you know you can make sloppy joes, hamburger, Italian chicken, and other recipes that are both elegant, kid friendly and finger lickin good? And here’s the best part–you don’t have to heat up your kitchen.
Today I experimented with chicken, cilantro and my favorite Texas BBQ Sauce. The results? I had time to clean my floors, spend more time in God’s word, hung out with my kids, and dinner was a hit!
Riggleman Mama’s Finger Lickin Good Chicken
Recipe: (OK so maybe it’s not really a recipe, maybe its more like throwing flavors into the bath and seeing what cooks up).
- 4 to 6 chicken breasts (hind quarters will work too, pull the skin off).
- One bunch of cilantro
- 1 TBSP of Red Pepper Flakes (optional).
- 2 cups of chicken stock or broth.
- Your favorite bottle of BBQ Sauce, pour in enough to cover chicken. An hour before serving, add more.
Toss everything into the crock pot, turn it on low and walk away for 6 to 8 hours. Pull chicken out and the bunch of cilantro and toss the cilantro. If you used hind quarters, shred the chicken and add a bit more sauce for flavor. Serve over a bed or rice, in a wrap with pepper-jack cheese, or bun it!
